I made my first homemade Chicken & Veg soup recently. The only one I have ever homemade before was a sweet potato soup so I wanted to try this to have it for lunch/dinner for a few days. A healthy and warming meal.
First I peeled 4 potatoes, cut up 3 carrots, 1 parsnip, 2 celery sticks, a clove of garlic, half a onion, and I boiled it all in vegetable 700mls stock for a half hour. I blended it all once it was soft and while it was boiling I oven cooked 2 breast of chicken and once cooked pulled off long thin strips and added it to my soup. I would add another chicken breast if I do it again.
I served it with a bit of salt & pepper on top and some brown bread and butter if you wish. It was gorgeous and very filling. I will definitely be making it again. Cheep & Cheerful & very healthy. I get all my veggies and meat in one! I wish to bake my own bread next time with it.
