Homemade Chicken Curry & Rice W/Kale

My friends mom made this recently & I though it was great as there was no need to buy a jar of sauce, just create your own out of some spices from the spice rack.

Chicken Curry & Rice With Kale.

Ingredients : Serves x 3

3 x Chicken Breasts.

1 x Red Pepper

3 x Carrots

1 x Red Onion

230 g Whole Grain Rice

4 Handful’s of Kale. 

For the Sauce :

Gara Massala (Spice)

Curry Powder.

Tumeric.

2 Tbsp’s of plain Flour.

Half a Pint of Water.

Method : 

  • Fry Chicken until Cooked.
  • Once cooked, add the pepper, carrots & onion and fry through.
  • Add the spices, water & flour to the chicken & veg in the one pot and simmer for a further 15 minutes)
  • Once the rice is brought to the boil, let it simmer on a medium heat once the water has evaporated.
  • Cook the Kale for 5 minutes in hot water.
