Sweet Potato Based Lunch/Dinner

Ingredients : Serves x 2 

  • 100g Smoked Salmon
  • 1 Avocado
  • Feta Cheese
  • Cherry Tomatoes
  • Spinach Leaves
  • 1 Red Pepper
  • 1 Green Pepper
  • 1 Large Sweet Potato

Method : sweetpotatosalad

  1. Peel & chop your large sweet potato into thick cubes. Coat in olive/coconut oil with cayenne pepper & paprika. Chop your 2 peppers. Pre-Heat Oven to 180 Degrees. In an oven dish/tray, bake sweet potato for 20 Minutes. Then add your chopped peppers to the tray & cook it all together for a further 20 minutes.
  2. Plate up your 2 plates with as much Spinach leaves as you wish. Scoop your sweet potato cubes/peppers onto the spinach leaves.
  3. Add your chopped up Avocado, Feta Cheese, and halved cherry tomatoes.
  4. Top with Smoked Salmon (or chicken/more veg) which ever you wish.
